Description
The best way to take advantage of all nutrients in cabbage is in a salad. Enjoy with BBQ Chicken!
Ingredients
1⁄2 cup
cucumber (peeled and diced)
1⁄3 cup
mayonnaise (or yogurt, or a mix of the two)
salt and pepper (to taste) Instructions
- Combine the yogurt or mayonnaise and vinegar in a small bowl.
- In a large salad bowl, mix the cabbage, carrots, cucumber and pine nuts.
- Add the dressing and toss.
