Easy cabbage salad

Description

The best way to take advantage of all nutrients in cabbage is in a salad. Enjoy with BBQ Chicken!

Ingredients

2 cups
cabbage (grated)
1⁄2 cup
cucumber (peeled and diced)
2  
carrots (large, grated)
1⁄4 cup
pine nuts
1⁄3 cup
mayonnaise (or yogurt, or a mix of the two)
1 teaspoon
white vinegar
   
salt and pepper (to taste)

Instructions

  1. Combine the yogurt or mayonnaise and vinegar in a small bowl.
  2. In a large salad bowl, mix the cabbage, carrots, cucumber and pine nuts.
  3. Add the dressing and toss.
