Salmon and spinach gratin

Description

Two very good for you ingredients put together - salmon is rich in fatty acids, and spinach is a good source of vitamin A and lutein - and baked in a creamy sauce, sure to please your family.

Ingredients

1 pound
salmon fillets (washed and dried)
1⁄2  
stock cube
1 teaspoon
cornflour
2 cups
single cream
3 tablespoons
pine nuts
10 ounces
spinach (frozen weight, thaw before adding)
   
butter
   
salt (to taste)
   
pepper (to taste)

Instructions

  1. Preheat oven to 400ºF.
  2. Grease an oven proof dish with butter and line with the thawed spinach. Arrange the salmon pieces on top. In a little bowl, dissolve the stock cube with a bit of hot water. Add the single cream and cornflour. Mix well. Season with pepper and salt.
  3. Pour the sauce over the salmon fillets. Top with the pine nuts and bake in the oven for about 30 minutes.
  4. Serve immediately.

Notes

Serve new potatoes, steamed or boiled, on the side. If your family is not partial to so simply cooked potatoes, steam them all the same then lightly sauté potatoes in butter.
