Apple snow
A light, frothy, and refreshing dessert, this classic apple snow brings together the tartness of apples with the sweetness of sugar, fluffed up by beaten egg whites. It's a delightful end to any meal.

In a medium saucepan, combine the apples, half the sugar, water, lemon zest and cinnamon, if using.
Cover and simmer over medium heat, stirring occasionally until the apples are tender, about 15-20 minutes.
Once the apples are cooked, remove from heat and puree them using a blender or a hand blender until smooth. Allow the mixture to cool.
In a large bowl, beat the egg with a few drops of lemon juice whites until they form soft peaks. Gradually add the remaining sugar, continuing to beat until stiff peaks form.
Mix the rest of the lemon juice wiht the cooled apple puree. Fold the mixture gently into the whipped egg whites until well combined.
Serve immediately, or keep in a cool place until it is time to serve.
Notes
This type of dessert snow should not be prepared earlier than 1 hour before serving.
If using cooking apples, you will need to add more sugar, up to doubld the amount, depending on how tart the apples are.
If you need a shortcut, you could use applesauce and packaged egg white.
You can mash the cooked apples with a fork and pass them through a sieve.
Serve the apple snow in individual dessert glasses or bowls, garnished with glacé cherries, a sprinkle of cinnamon or a dollop of whipped cream. A biscuit on the side can add a delightful crunch.
Variations
Spiced apple snow: Add a combination of warm spices like nutmeg, cloves, and ginger to the apple mixture.
Cider apple snow: Replace half the sugar in the apple stewing process with apple cider for a robust apple flavor.
Creamy apple snow: Fold in some whipped cream or custard to the final mixture for a creamier version of the dessert.
