Carrot and potato purée

A simple and highly digestible purée suitable for babies from 6 month onwards. You can prepare a soup for the whole family, setting the portion for the baby aside before seasoning, or cook a batch and freeze individual portions.

Ingredients

1 lb carrot (rinsed, peeled and sliced)
1 lb potato (rinsed, peeled and chopped)
4 c liquid (water or low salt broth)
  seasoning (salt and pepper to taste for older kids and adults only)

Instructions

Place the carrot, potato, liquid and olive oil, if used, in a saucepan and heat until boiling. Let them cook until the carrot and potato are tender, about 15 minutes.

Purée with the blender, food mill or the masher. Set aside the baby portion and season the rest with salt and pepper.

Serve the baby portion just warm. If necessary, reheat the rest of the carrot and potato purée before serving to the rest of the family.

Notes

The purée is made with water when it is for babies from 6 to 9 months, especially if it is one of the first purees they take. They don't need salt or pepper either, at most a little bit of olive oil.

If the baby is over 9 months old, the liquid to use can be a low-fat, low-salt vegetable, chicken or meat broth. Homemade broth, no stock cubes nor ready made store bought stock.

The purée can be seasoned just before serving to adults.

If the mashed potato and carrot is made for adults and school age kids only, you can substitute olive oil with 40-50g of butter and sauté the carrot in the butter before adding the potatoes and a flavorful broth. You could also add a little butter, liquid cream or cream cheese to give it more consistency, to make it into a creamy carrot and potato soup.
