Cheesy mashed potato casserole

This cheesy mashed potato casserole combines the comforting warmth of traditional mashed potatoes with a creamy, cheesy twist. The mash could be infused with the aromatic flavors of garlic and herbs, this dish is a crowd-pleaser that's perfect for family gatherings or holiday meals.

Ingredients

4 lb potato (peeled and cut into chunks)
1 c milk (whole milk)
1⁄2 c butter (unsalted butter)
2 clv garlic (minced)
1 t salt
1⁄2 t black pepper (optional, ground)
2 c cheese (shredded sharp Cheddar cheese)
2 T herbs (your choice of chopped fresh herbs)
1⁄2 c cheese (grated Parmesan cheese)

Instructions

Preheat your oven to 375°F and lightly grease a 9x13 inch baking dish.

In a large pot, add the potatoes and enough salted water to cover. Bring to a boil over high heat, then reduce to a simmer and cook until the potatoes are fork-tender, about 20 minutes.

While the potatoes are cooking, heat the milk, butter, minced garlic, salt, and pepper in a small saucepan until the butter is melted and the mixture is warm.

Drain the potatoes well, then return them to the pot. Pour the warm milk mixture over the potatoes and mash until smooth and well combined.

Stir in half of the cheddar cheese, the Parmesan cheese, and the fresh herbs.

Transfer the mashed potatoes to the prepared baking dish, smoothing the top with a spatula. Sprinkle the remaining cheddar cheese over the top.

Bake for 25-30 minutes, or until the cheese is melted and lightly browned.

Notes

You could also steam or microwave the potatoes for the mash.

Serve this delicious casserole as a side dish with roasted chicken, steak, or even a meatless main. 

Variations

Bacon and green onion: Cook 4 slices of bacon until crispy. Crumble and mix into the mashed potatoes with 1/4 cup of chopped green onions.

Spicy jalapeño: Remove seeds and mince 2 jalapenos. Add to the milk and butter mixture to infuse the spice.

Mushroom cream: Stir in a can of condensed cream of mushroom soup with the mashed potatoes for a savory, creamy variation.
