Cheesy mashed potatoes

Enjoy the creamy texture and flavorful cheesy goodness of this classic dish. You can serve a soft cheesy mash or cookit under the grill for a crispy top.

Ingredients

2 lb potato (starchy potatoes, peeled and cut into chunks)
1⁄2 c milk (whole milk is best)
4 T butter (unsalted butter)
1 c cheese (your choice of cheese, shredded)
  seasoning (salt and pepper to taste)
  water (to boil the potatoes)

Instructions

Place the potato chunks in a large pot and cover them with cold water. Add a generous pinch of salt. Bring to a boil over medium-high heat and cook until the potatoes are tender when pierced with a fork, usually around 15-20 minutes.

While the potatoes are cooking, preheat the oven to 350°F if you prefer a baked cheesy crust on top.

Drain the potatoes and return them to the pot. Add butter, milk, and optional garlic powder. Mash the potatoes using a potato masher until smooth and creamy. If you prefer a smoother consistency, you can use a hand mixer or blender.

Stir in the shredded cheese until it melts and incorporates into the potatoes. Season with salt and pepper to taste. 

If baking, transfer the mashed potatoes to an oven-safe dish. Top with additional shredded cheese and bake for about 15 minutes or until the cheese is melted and bubbly.

Notes

Serve the cheesy mashed potatoes as a delightful side dish alongside roasted meats, grilled vegetables, or enjoy them on their own. 

Cheesy mashed potatotes could be used to top a cottage or fisherman´s pie, any dish Parmentier, or as the base eggs en cocotte or a potato soufflé.

Variations

For more flavor, add 1 teaspoon garlic powder. 

If desired, add 2 tablespoons of chopped chives for a burst of freshness.
