Chicken and spinach skillet pasta with lemon and Parmesan

A delightful fusion of flavors and textures, this chicken & spinach skillet pasta is a nutritious and kid-friendly dish that comes together in one skillet for easy cleanup.

Ingredients

1 pk pasta (your choice, 8 oz package)
2 pce chicken (boneless and skinless chicken breasts, cut into bite-sized pieces)
2 c spinach (fresh baby spinach, rinsed)
1 lemon (zested and juiced)
1⁄3 c cream (light or heavy cream, your choice)
2 clv garlic (minced)
  seasoning (salt and ground pepper to taste)

Instructions

Boil pasta according to package instructions until al dente. Drain and set aside.

In a large skillet, heat olive oil over medium heat. Add chicken pieces, season with salt and pepper, and cook until no longer pink. Remove from skillet and set aside.

In the same skillet, add minced garlic and sauté for 1 minute. Add spinach and cook until wilted.

Add the cooked pasta and chicken back into the skillet with the spinach.

Add lemon zest, lemon juice, cream and half of the grated Parmesan. Stir well to combine.

Sprinkle the remaining Parmesan on top.

Sprinkle the remaining Parmesan on top and serve warm.

Notes

Serve this dish warm, straight from the skillet to maintain its flavors. It pairs well with a side of garlic bread or a simple salad.

Variations

For a lighter version, omit the cream.

Use gluten free pasta for a gluten free version.  Use plant based protein and vegetarian grated cheese for a vegan version.
