Easy tomato sauce

There are few things as comforting as a warm, hearty bowl of tomato sauce. This recipe is easy and can be made with ingredients that you likely have on hand. Making tomato sauce with pureed tomato saves time and energy.

Ingredients

1 onion (medium sized, finely chopped)
1 ct sauce (passata, 24 oz carton)
1 t sugar
2 t salt

Instructions

Heat the oil in a pan and fry the onion until softened and very slightly browned, - minutes.

Add passata, sugar and salt. Cook on a low heat until the sauce starts thickening, about 20 minutes. Cook it for longer, 20-30 minutos more if you like the sauce caramelized. Check the seasoning.

Onion should have disappeared into the sauce. If that is not the case and you don´t want to find bits, blend the sauce.

Ready to use.

Notes

This tomato sauce will keep 2 weeks in the fridge, in an airtight container. You can also freeze it in small portions.

Variations

Add oregano and basil for an Italian tomato sauce.

Add herbs de Provence and capers for taste of southeasterm France.

Add rosmary and thyme for a tomato sauce for game dishes.

Add bay leaf for a tomato sauce to go with fish dishes.

Tomato sauce in the microwave

Mix 3 tablespoons of chopped onion with 1 tablespoon of olive oil in a microwaveable dish and cook for 2 minutes. Add half a carton of passata, a little salt and a pinch of sugar. Cook on high 6-8 more minutes. Let stand 2 minutes and use, or blend if you wish.
