German soup

Soups are ideal comfort food for chilly days. This soup with mashed potato and sausage is sure to please kids. What's more, they can help to prepare it.

Ingredients

1 T butter
3 c milk
1 c broth
5 T potato (dried potato flakes)
1⁄4 c ham (optional, cooked ham, diced)
2 sausage (frankfurters, sliced)

Instructions

Heat butter in a pan and cook frankfurter slices. Keep warm until needed.

Pour milk and broth into the same a pan and heat until boiling point but don't let the liquid actually boil.

Add potato flakes. Remove from heat and stir with a wooden spoon up to creamy consistency.

Garnish with the sliced frankfurters and diced ham. Serve.

Notes

Sprinkle grated cheese on top and place under the broiler until the top becomes golden brown.

Use vegetable broth and cooked broccoli spears, diced zucchini or carrot stripes for a meat free version.

You can use your favorite hot dogs for this recipe, even leave the sausages whole. Sliced sausages are just easier for kids to eat.

If you don't have enough potato flakes, add a little cornstarch to the milk and simmer for 2-3 minutes before removing from the heat and adding the potato flakes. Kuzu or arrowroot would also thicken the soup, however, these are best diluted in the broth first.
