Lemon and tahini dressing

Tahini dressing is a creamy, nutty, and incredibly versatile sauce that can elevate salads, grain bowls, and even grilled meats and vegetables. Made from tahini paste, which is ground sesame seeds, this dressing is a staple in Middle Eastern cuisine but has gained popularity worldwide. It's vegan, gluten-free, and packed with flavor.

Ingredients

1⁄2 c tahini (tahini paste)
1⁄4 c lemon (freshly squeezed lemon juice)
2 clv garlic (minced)
1 t cumin (ground cumin)
1⁄4 c water (more if needed)
  seasoning (salt and freshly gorund pepper to taste)

Instructions

In a mixing bowl, combine the tahini paste, lemon juice, minced garlic, and ground cumin. Whisk the ingredients together until well combined.

Slowly add water to the mixture while whisking. Start with 1/4 cup and add more as needed until you reach your desired consistency. Add salt and freshly ground black pepper to taste. 

Drizzle in the olive oil while whisking to emulsify the dressing. Taste the dressing and adjust the seasoning or acidity as needed.

Transfer the dressing to a jar with a lid and refrigerate for at least 30 minutes to allow the flavors to meld together.

Notes

Drizzle tahini dressing over mixed greens, a salad or a grain bowl. Mix into pasta or potato salads for a creamy, nutty flavor. Use as a marinade for grilled meats or tofu.

Make it slightly thicker and use as a dipping sauce for grilled vegetables or pita bread.

Variations

If you prefer a sweeter dressing, you can also add maple syrup or honey when you season with salt and pepper.

Sprinkle chopped fresh parsley over the dressing for added color and flavor.
