Peach parfait

Peaches are hidden in the yogurt ice cream. This recipe may appeal to your fussy fruit eater. Kids love ice cream.

Ingredients

3 peach (ripe, peeled, stone removed, diced)
16 oz yogurt (peach yogurt, better non fat)
2 T honey (or 3 T sugar)
6 T granola
3 peach (as garnish, peeled, stoned, cut into slices)

Instructions

Combine the cubed peaches with yogurt and honey (or sugar) and process until smooth in a blender or food processor.

Turn mixture into a metal freezer container. Cover with foil and freeze for 45 minutes.

Take out of the freezer, beat to break up the ice crystals, return to freezer container and freeze for 45 minutes more.

Repeat this procedure until ice cream is set, then beat to get a smooth frosty mixture.

Distribute this peach yogurt ice cream into 6 cups.

Sprinkle layer of granola over, cover with plastic wrap and freeze until ready to use.

When it is time to serve, peel, remove seed, and slice 3 more peaches. Remove cups from the freezer and top with peach slices.

Notes

Prepare the yogurt ice cream in the ice cream maker, if you have one. This way you ensure a smooth, creamy texture.

Honey is sweeter than sugar and less is required. Nevertheless, honey is not recommended for babies because the risk of botulism.
