Peanut butter and jelly bars

Perfect for dessert, a grab-and-go breakfast, or a satisfying snack, these delectable bars are sure to delight both kids and adults alike. With their heavenly balance of sweetness and richness, these peanut butter and jelly bars will leave you craving more and make your taste buds dance with delight.

Ingredients

1 1⁄2 c flour (all purpose flour)
1⁄2 c sugar (granulated sugar)
1⁄2 c sugar (brown sugar, packed)
1⁄2 t salt
3⁄4 c butter (unsalted butter, diced)
1 egg (large, beaten)
3⁄4 c peanut butter
1⁄4 c sugar (confectioner´s sugar)
1 c jelly (or jam, your choice of flavor)

Instructions

Preheat your oven to 350°F. Grease a 9x9-inch baking pan or line it with parchment paper, leaving some overhang for easy removal.

In a large bowl, whisk together the all-purpose flour, granulated sugar, brown sugar, baking powder, and salt until well combined.

Using a pastry cutter, fork, or your fingertips, cut the cold butter into the flour mixture until it resembles coarse crumbs. Add the beaten egg and mix until just combined.

Press two-thirds of the crumb mixture evenly into the bottom of the prepared baking pan. Set aside the remaining crumb mixture for the topping.

In a small bowl, mix together the creamy peanut butter, confectioners' sugar, and vanilla extract until smooth. Drop spoonfuls of the peanut butter mixture over the crust and gently spread it into an even layer using a spatula or the back of a spoon.

Spread the jelly or jam evenly over the peanut butter layer. 

Sprinkle the remaining crumb mixture evenly over the jelly layer.

Bake in the preheated oven until the crumble topping is lightly golden and set, 25-30 minutes.

Remove the pan from the oven and allow the bars to cool completely in the pan on a wire rack. Once cooled, use the parchment paper overhang to lift the bars out of the pan and onto a cutting board. Cut into 16 squares.

Notes

If the jelly is too thick to spread, you may need to heat it in the microwave for 10-20 seconds to make it more spreadable.

Store any leftovers in an airtight container at room temperature for up to 5 days.

Variations

Substitute 1/2 cup flour with 3/4 cup oats.
