Quick and easy fruit tarts

These easy fruit tarts are a delightful dessert that highlights the vibrant flavors and colors of summer fruits, combined with the delicate texture of puff pastry and the creamy sweetness of whipped cream.

The recipe can be easily adapted to use other types of fruit.

Ingredients

1 pk puff pastry (ready rolled puff pastry)
4 T butter (already melted butter, and some to grease the pan)
2 c berries (or totaste, mixed berries, rinsed and stemmed)
2 T sugar (brown sugar)
2 T sugar (confectioner´s sugar)
3⁄4 c cream (whipping cream)
  mint (optional, fresh mint leaves for decoration)

Instructions

Heat the oven to 400º F. Line a baking tray with parchmentm paper and grease it lightly with butter, if necessary.

Extend the puff pastry on the prepared tray. brush it with melted butter. Sprinkle the brown sugar on top and bake in the middle of the oven until nicely puffed and golden brown, 20-25 minutes.

When ready, remove the base of the tart from the oven and let it cool down.

Whipe the cream, adding half the confectioner´s sugar while the pastry bas cools down.

To finish off the tart, extend the whipped cream over the puff pastry base and top with the berries. Decorate with mint leaves (if uising) and chill for 30 minutes.

Cut into squares just before serving.

Notes

You can sprinkle confectioner´s sugar over the tart as decoration.

Variations

To make quick peach tarts, cut the rolled puff pstry int  9 squares. Rinse and slice 2 peaches. Brush the squares with butter, place 2-3 slices of fruit on each one, brush with more melted butter and sprinkle with brown sugar. Bake as normal. Serve with whipped cream once cooled down or omith the cream altogether.

To make autumn or winter fruit tarts, follow the instructions for peach tarts, substituting the peaches with 1-2 apples, rinsed, cored and sliced.
