Baked beans with sausage

This kid-friendly sausage and baked beans dish is a great combination of comfort food and nutrition. The sausages provide an irresistibly delicious taste, while the buttery beans are packed with protein and the vegetables have other nutrients.

Ingredients

1⁄2 c sausage (sliced sausage)
1 tomato (medium sized, peeled, seeds removed, minced)
1 mushroom (clean, minced)
2 T pepper (red bell pepper, minced)
4 T liquid (milk or a low fat broth)
1⁄2 c beans (baked beans,)

Instructions

Mix all the ingredients in a small saucepan.

Bring to a boil, then simmer, uncovered, until the sauce thickens slightly, about 10 minutes.

Serve just warm with a piece of bread or a piece of toast.

Notes

The best are turkey sausages, chicken sausages, or smooth sausages like frankfurters and bratwurst sausages.

You can use homecooked baked beans or canned.

This dish will keep up to two days in the fridge, covered, and it can also be frozen (best to freeze it in individual servings)

Variations

You could substitute the tomato, bell pepper or mushroom with other vegetables, like carrot or butternut squash. You could add any vegetable your kid likes.
