Cheesy creamed spinach

This cheesy creamed spinach recipe is a mouth-watering and indulgent side dish that is perfect for any occasion. If the spinach are chopped finely, this is also a dish the kids will enjoy.

Ingredients

1 pk spinach (frozen chopped spinach, 10 oz package, cooked and drained)
1 T olive oil (or other vegetable oil)
1 T onion (grated or finely chopped onion)
1⁄3 c sour cream
1⁄4 c milk (whole milk)
2 T cheese (grated Cheddar cheese)
2 pn salt (or to taste)

Instructions

Whisk the sour cream, milk, corn starch, grated cheese and salt in a bowl. Set aside.

Heat the oil in a skillet over medium heat. Add the chopped onion and cook until it starts softening, 1-2 minutes.

Stir the sour cream and cheese mixture into the pan. Cook until the sauce thickens.

Add the cooked spinach to the skillet, mix well and cook 2 minutes more, until well warmed.

Serve the cheesy creamed spinach warm.

Notes

You could make this recipe with fresh spinach, well rinsed and finely chopped.

Cook the spinach in the microwave or stove top, following the instructions in the package. Drain using a fine mesh strainer and pressing lightly to remove all the moisture.

This recipe serves 4 as a side dish, 2-3 as an appetizer.

Variations

For more flavor, substitute olive oil with butter. You could also add 1 clove of garlic, grated or finely chopped.

Add a little more sour cream, milk, cheese or corn starch until the cream has the texture you like.
