Cucumber carrot pockets

Try cucumber carrot pockets because getting your kids used to veggie snacks is a way to reach those five a day.

Ingredients

4 T dressing (ranch dressing)
1 cucumber (small, peeled and sliced very thin)
1 carrot (medium, peeled and sliced very thin)

Instructions

Open the pita pockets and spread the inside with a little ranch dressing.

Add 3 to 4 cucumber slices into each pocket.

Slide a few carrot slices on top of the cucumber ones.

Notes

To open the pocket, place a pita half on a microwave safe dish or paper towel and heat on high for 8 to 10 seconds. It should open on its own or with just gentle pressure. Alternatively, place the whole pita on a microwave safe dish or paper towel and heat on high power for 15 to 20 seconds - it would inflate like a balloon - and open a slit one one side to open the pocket - careful, it will be hot.

If your microwave is too powerful and you are having problems because the bread comes out too dry, sprinkle a few drops of water over the pita bread before microwaving.

Variations

Cucumber and carrot are sweet so these will be easily accepted. Later, vary the vegetables used to fill the pockets.

You can prepare the same appetizing pita pockets with other vegetables, like lettuce leaves, baby leaf spinach, sliced tomato, thinly sliced green onions or sweet peppers cut into thin strips.
