Meatballs with hidden veggies

Struggling to get your little ones to eat their veggies? Give this tasty twist on a classic recipe a go! Our meatballs with hidden veggies are packed full of nutritious and delicious ingredients. Using minced meat and finely grated vegetables, these meatballs make for an easy and super flavorful meal. They're also great for batch cooking as they can be frozen.

Ingredients

1⁄2 lb meat (ground meat)
1 carrot (small, grated)
1 zucchini (small. peeled and grated)
1 potato (small, peeled and grated)
1⁄2 onion (peeled, minced)
1 T sauce (optional, tomato sauce)
1 egg (medium sized, beaten)
  cooking oil (vegetable oil for frying the meatballs)

Instructions

Place the meat, carrot, zucchini, potato, onion, tomato sauce and egg in a large bowl. Mix well.

Shape the mix into meatballs.

Heat oil in a deep pan and fry the meatbals (in batches) until done.

Drain the meatballs on absorbent paper.

Serve warm with a sauce, pasta or rice.

Notes

The best meat for children would be veal, chicken or turkey.

The time the meatballs take to cook depends on their size and the amount of oil in the pan.

The meat mixture can be kept, covered, in the refrigerator for one day.

The meatballs can be frozen. Freeze them, well wrapped, divided into individual servings for up to3 months.

The meatballs could be cooked in the oven, 25 minutes at 350º F.

Variations

Make the meatballs more flavorful adding some herbs and mild spices.
