Potato wedges

Oven baked potato wedges are cooked with less oil. Baking them in the oven saves time as these can be done at the same time than the main course and require less cleaning afterwards.

Ingredients

2 lb potato (rinsed, scrubbed and cut into wedges)
1 egg white (lightly beaten)
1⁄2 t paprika
  salt (optional)

Instructions

Heat oven to 400º F. Lightly oil a shallow oven pan.

Combine egg white and paprika in a bowl. Add potato wedges and toss to coat them in the seasoned egg white.

Extend potato wedges in the prepared pan in a single layer. Place the pan, uncovered, in the oven.

Bake until the potato wedges are golden brown, 40-45 minutes.

Remove potato wedges from the oven when done, sprinkle a little salt over and serve warm.
