Pumpkin chili
Pumpkin chili is delicious and mild. This makes it suitable for young children.
Ingredients
2 lb beef (ground beef)
1 onion (large yellow onion, chopped)
1 pepper (optional, sweet pepper, yellow, diced)
1⁄2 t chili powder
2 cn beans (pinto beans or red kidney beans, 15 oz cans)
1 cn juice (tomato juice, 46 oz can)
2 cn tomato (diced or stewed tomatoes, 28 oz cans)
1 cn pumpkin (diced pumpkin or pumpkin puree)
1 t spice mix (pumpkin pie spice mix)
cooking oil (to brown the meat)
3⁄4 c corn (optional, sweetcorn, fresh or frozen)
Instructions
In a large pot over medium heat, brown the beef. Drain.
Add the bell pepper, if using, and onion pepper. Cook until softened, about 5-7 minutes.
Add the remaning ingredients and stir.
Simmer 1 hour.

Substitute tomato juice with beef broth if you wish.
