Quinoa chocolate chip pancakes

A delightful twist on the classic pancake that incorporates cooked quinoa and dark chocolate chips into the batter. Ingredients

3⁄4 c quinoa (cooked quinoa)
3⁄4 c flour (whole wheat flour)
1 1⁄2 t baking powder
1⁄4 t salt
2 egg (large)
1 c milk (whole milk)
1⁄4 c chocolate (chocolate chips, preferably dark chocolate)
  cooking oil (or butter, to cook pancakes)

Instructions

In a large bowl, combine the flour, baking powder, and salt.

Whisk together the eggs, milk, and vanilla in a separate bowl.

Add the wet mixture to the dry ingredients, then fold in the cooked quinoa and chocolate chips.

Preheat a griddle or skillet over medium heat. Lightly grease with oil or butter.

Pour ¼ cup of batter for each pancake and cook until bubbles form on the surface. Flip and cook until golden brown.
