Chicken, apple and nut salad

This salad is a harmonious blend of savory and sweet, perfect for a refreshing and satisfying meal. 


2 c chicken (cooked chicken, chopped)
1 apple (rinsed, sliced, diced or cut into wedges)
1⁄2 c walnuts (better if lightly toasted)
3 c salad leaves (mixed salad leaves or just shredded lettuce)
  dressing (to taste)


In a large bowl, mix chicken, apple, and walnuts. Toss with a light dressing. Serve over mixed greens and sprinkle with cheese, if used.

Preparation time


The best dressings for this salad are the old fashioned cocktail sauce lightened with some mor mayonaise, a honey and mustard dressin, ranch dressing or a lemon vinaigrette.


Add other fruit like grapes, pineappel or pear. Vary the dressing to match the fruit addes.
