Easy cabbage salad

The best way to take advantage of all nutrients in cabbage is in a salad. Enjoy with BBQ Chicken!

Ingredients

2 c cabbage (washed and shredded)
1⁄2 c cucumber (peeled and diced)
2 carrot (peeled and grated)
1⁄4 c pine nuts
1⁄3 c mayonnaise
1 t vinegar (white wine vinegar)

Instructions

Combine the yogurt or mayonnaise and vinegar in a small bowl.

In a large salad bowl, mix the cabbage, carrots, cucumber and pine nuts.

Add the dressing and toss.

Notes

You can substitute mayonnaise for natural yogurt, or use a mix of the two.

Some children prefer apple than cucumber because of its sweetness.
