Nutty morning granola

A wholesome homemade granola packed with oats, nuts, coconut and dried fruit that can be enjoyed as a crunchy cereal or topping for yogurt. This easy recipe yields a deliciously crispy and naturally sweetened granola perfect for breakfast or snacking.

Ingredients

4 c oats (old fahioned oats)
1 c mixed nuts (chopped, almonds, walnuts or pecan work great)
1⁄2 c coconut (unsweetened shredded coconut)
1⁄4 c honey (or maple syrup)
2 T cooking oil (melted coconut oil)
1⁄2 c fruit (dried fruit, raisins, cranberries, apricots)

Instructions

Preheat your oven to 300°F (150°C).

In a large bowl, combine the oats, nuts, and coconut.

In a separate bowl, mix together the honey (or maple syrup), coconut oil, and vanilla extract. Pour this over the oat mixture and stir until well coated.

Spread the mixture on a baking sheet in an even layer.

Bake for 20-25 minutes, stirring halfway, until golden brown.

Remove from the oven and let it cool. Once cooled, mix in the dried fruit.
