Oatmeal blueberry banana waffles

A nutritious breakfast option. The recipe uses home made oat flour and blueberries are added to the batter, which is cooked until golden. There are vegetarian or vegan substitutions available.

Ingredients

1 1⁄2 c oats (rolled oats)
1⁄2 t cinnamon (powdered cinnamon)
1 pn salt
1 c milk (whole milk)
2 egg (large)
2 T butter (already melted butter, unsalted)
3⁄4 c blueberry (fresh or frozen)
1 banana (large, peeled and sliced)

Instructions

Place the rolled oats in a blender and process until a fine flour forms.

Transfer to a large bowl and mix in the baking powder, cinnamon, and salt.

In another bowl, whisk together the milk, eggs, melted oil or butter, and vanilla extract.

Mix the wet ingredients into the dry ones, then gently fold in the blueberries.

Preheat your waffle iron according to the manufacturer's instructions and lightly grease.

Pour enough batter to fill the waffle mold without overflowing. Cook until crispy and golden.

Serve with additional blueberries and a drizzle of maple syrup.

Notes

The waffles can be topped with more blueberries and maple syrup. 

Substitute milk with almond milk and melted butter with melted coconut oil for a vegetarian or vegan version.

Substitute hone with maple syrup if you wish.
