Yogurt and blueberry

Add more or less yogurt to make a smoothie, a flavored yogurt to eat with a spoon or a dip for fruit and cookies.

Ingredients

1⁄2 c blueberry (rinsed)
2 t juice (lemon juice)
1 T mint (optional, fresh mint leaves, rinsed and chopped)
2 c yogurt (or less, natural Greek yogurt)
2 t honey (optional, or brown sugar, or maple syrup)

Instructions

Leave 1-2 tablespoons of blueberries apart.

Place the rest of the blueberries, the lemon juice, mint and honey (if using) in the blender and blend a medium speed 1-2 minutes.

For a smoothie, pour all the Greek yogurt into a medium bowl or pitcher. 

For a flavored yogurt, pour 1 1/4 to 1 1/2 cups of Greek yogurt into a bowl.

For a yogurt and berry dip, pour 1 to  1 1/4 cups of Greek yogurt into a bowl.

Stir in the blueberry mixture until fully combined. 

Distribute into individual bowls, if necessary, decorate with de reserved blueberries and serve.

Notes

Substitute blueberries with any other of your favorite berries, raspberries, strawberries or blackberries to make and yogurt and raspberry smoothie, a blackberry flavored yogurt or a yogurt and strawberry dip.

When you use blackberries and strawberries, and meybe also raspberries, you should pass the fruit pulp throgugh a strainer (to remove any hard bits) before mixing it with the yogurt.

If the smoothie is too thick, you can mix in a little milk.

Adding the yogurt to the blender may alter is healthful properties, that's why we mix the fruit puree with the yogurt by hand.

What to do if there is any leftover yogurt and berry mix? Make it into yogurt and berry popsicles. If you don't have enough, add more Greek yogurt sweetened with honey.
