Fruity brown rice lunchbox salad

Great for lunch boxes or a healthy after-school snack.

Ingredients

2 apple (tart apples work better)
1⁄4 c cranberries (dried cranberries)
1⁄4 c pecan nuts (chopped)
1 c yogurt (vanilla flavored yogurt)
1⁄4 c honey
2 T lemon (freshly squeezed lemon juice)
2 c rice (brown rice already cooked)

Instructions

Combine all ingredients in a large bowl and refrigerate.

Notes

Children prefer sweeter tastes so this salad may be the perfect vehicle to introduce them to healthy foods such brown rice.

If you do not have vanilla flavored yogurt, substitute with natural yogurt + 2 drops vanilla extract.
