Baked chicken bites

In the world of family-friendly snacks, baked chicken bites reign supreme. These little chicken bites are not only a healthier alternative to fried chicken nuggets but also a delight to every child. Packed with protein and bursting with flavor, baked chicken bites are a perfect option for lunchboxes, after-school snacks, or even as a party appetizer.

Ingredients

1 1⁄2 pounds chicken (skinless chicken breast, cut into bite-sized pieces, roughly 1-2 inches each)
1 1⁄2 cups bread crumbs
1⁄2 cup cheese (optional, grated Parmesan cheese, for flavor)
2 egg (beaten, help the breadcrumbs stick to the chicken)
1 teaspoon garlic (optional, garlic powder, for flavor)
seasoning (salt and pepper to taste)
  olive oil (olive oil spray)

Instructions

In a bowl, combine the chicken pieces with garlic powder, if using, salt, and pepper. For those opting for the spicy version, add a pinch of cayenne or a few drops of hot sauce at this stage.

To set up the breading station, beat the eggs in one bowl. In another, mix breadcrumbs and parmesan cheese, if using. If you're going for the lemon herb variation, mix in your chosen herbs here.

Dip each piece of chicken into the egg, allowing the excess to drip off, then roll it in the breadcrumb mixture, pressing gently to adhere.

Now that your chicken is prepped and ready, it's time to transform these raw ingredients into golden, crunchy bites.

Set your oven to 400°F (204°C). Line a baking sheet with parchment paper and lightly spray it with olive oil.

Place the coated chicken bites on the prepared baking sheet, ensuring they are spaced apart for even cooking.

Place the sheet in the oven and bake for 15-20 minutes.

At about 10 minutes, flip each piece to ensure both sides are equally crispy.

When ready, remove the baked chicken bites from the oven and serve warm.

A hot oven ensures a crispy exterior while keeping the chicken juicy inside. To be ready, the chicken should be golden brown and reach an internal temperature of 165°F (74°C).

Serve the baked chicken bites wtith classic dips like ketchup, ranch or honey mustard. Try aioli or spicy sriracha mayo for a sophisticated touch.Pair with a fresh green salad or sweet potato fries for a balanced meal.

Variations

Add cayenne pepper or hot sauce with the seasoning for those who crave a spicy twist.

Add herbs like thyme or rosemary to the breadcrumbs for a refreshing lemon herb variation.

Substitute chicken with firm tofu or cauliflower florets for a vegan alternative.
