Muffin pizzas

Tiny pizzas with an English muffin base are perfect to cook with your kids.

Ingredients

4 muffin (split in half into two rounds)
4 T sauce (pizza sauce or tomato sauce)
6 T cheese (shredded Mozzarella cheese)

Instructions

Preheat oven to 350°F.

Place muffin halves on a baking sheet.

Spread 1 tablespoon sauce on each one, then top with 1 tablespoon shredded mozzarella.

Add extra toppings if using. Bake for 8 minutes, or until cheese melts.

Notes

If the mini pizzas come out too moist, try tomato paste.

Substitute mozzarella with your favorite cheese, shredded.You can add other toppings, as well. Substitute tomato sauce with pizza sauce or spaghetti sauce.

Try sliced mushrooms, sliced olives, thinly sliced vegetables, such as bell peppers or onions, a slice of salami, cooked ham, even anchovy fillets. Sprinkle some oregano or basil for flavour.

If you don't want to use the oven, toast the halved muffin in the toaster, add sauce and shredded mozzarella and microwave on high for 30-60 seconds, until cheese melts
