Quinoa and roasted veggies salad

A nutritious and flavor-packed dish perfect for a healthy meal. The combination of protein-rich quinoa and a medley of roasted Mediterranean vegetables s create a vibrant, satisfying salad. 


2 c quinoa (cooked quinoa)
1 c pepper (roasted bell peppers, diced)
1 c zucchini (sliced zucchini, roasted)
1⁄2 c tomato (roasted cherry tomatoes)
4 T basil (fresh basil, chopped)
  dressing (lemon-tahini dressing)


In a bowl, mix quinoa with roasted vegetables. Drizzle with lemon-tahini dressing and mix well. Garnish with fresh basil.

A simple vinaigrette or lemon vinaigrette would work with this salad.


Add lettuce or some mixed salad leaves.

Vary roasted vegetables to your taste, roasted onions and eggplant would go well.
