Quinoa and roasted veggies salad

A nutritious and flavor-packed dish perfect for a healthy meal. The combination of protein-rich quinoa and a medley of roasted Mediterranean vegetables s create a vibrant, satisfying salad. 

Ingredients

2 cups quinoa (cooked quinoa)
1 cup pepper (roasted bell peppers, diced)
1 cup zucchini (sliced zucchini, roasted)
1⁄2 cup tomato (roasted cherry tomatoes)
4 tablespoons basil (fresh basil, chopped)
  dressing (lemon-tahini dressing)

Instructions

In a bowl, mix quinoa with roasted vegetables. Drizzle with lemon-tahini dressing and mix well. Garnish with fresh basil.
